Onions and Cottage Cheese

10 medium onions

1 carton cottage cheese

½ pint cream

Salt and pepper to taste

Slice and boil onions until tender, drain and add other ingredients. Heat, but do not boil. Serves 6.

Creamed Onions and Peanuts

Allow 2 medium sized onions per person. Slice into rings and boil in salted water until tender, then drain. Make a thick cream sauce with added grated cheese. Put a layer of onions in a casserole than a layer of cream sauce and a layer of chopped peanuts. Repeat ending with a layer of sauce and nuts. Bake in oven until hot and brown on top. Oven 350 degrees. Especially good with ham.

French Fried Onions

6 large Spanish or Bermuda onions

Batter

2 eggs beaten together

1/1/3 cups flour

2 teaspoons salt

8 tablespoons water

Cut onions in ¼ inch slices. Separate into rings and cover with ice water for 20 minutes. Drain and dry rings. Dip into batter and fry in deep fat 450 degrees. Place rings in paper lined pan and keep warm in low oven with door open or on hot tray. Sprinkle generously with salt. Serves eight.
